So you love decadent cakes, but maybe you're not a fan of cream cheese frosting… or maybe you just want to try something different! Ermine frosting is a very light vanilla frosting, sometimes known as Roux Icing. It's a great cream cheese frosting alternative to use on rich, flavorful cakes like red velvet cake and Devil's Food cake as a way to enhance their taste rather than overpower it. Materials
5 tablespoons flour
1 cup whole milk
1 teaspoon vanilla
1 cup unsalted butter
1 cup granulated sugar
A pinch of salt
Instructions
Gather your ingredients and head over to the stove! Using a small sauce pan over medium heat, whisk flour and milk together until your mixture is thick. Think tapioca pudding.
Pour into a separate bowl and whisk in vanilla and salt. Press plastic wrap over the top of the mixture to keep skin from forming, and set aside to cool.
Using an electric mixer, combine butter and sugar and beat until fluffy. Add the flour mixture in even portions until fully combined.
