Ermine frosting is a very light vanilla frosting, sometimes known as Roux Icing. It’s a great cream cheese frosting alternative to use on rich, flavorful cakes like red velvet cake and Devil’s Food cake as a way to enhance their taste rather than overpower it. Inspired by this recipe, we’ll show you how to make this simple and super tasty old-fashioned frosting!
- Gather your ingredients and head over to the stove! Using a small sauce pan over medium heat, whisk flour and milk together until your mixture is thick. Think tapioca pudding.
- Pour into a separate bowl and whisk in vanilla and salt. Press plastic wrap over the top of the mixture to keep skin from forming, and set aside to cool.
- Using an electric mixer, combine butter and sugar and beat until fluffy. Add the flour mixture in even portions until fully combined.
